Alterwood Plank Salmon
INGREDIENTS
24x8x1 inch untreated alterwood
plank
fish brine
1/4 cup kosher salt
2 tablespoons brown sugar
4 cups water
Plank brine
6-8 cups water
1 orange peeled and cut into chunks
1 lemon juiced
6-8 salmon fillet
freshly ground black pepper
to taste
2 tablespoons brown sugar
1/2 teaspoon salt
1 tablespoon water
DIRECTIONS
Mix 1/4 cup kosher salt, 2 tablespoons brown sugar,
4 cups water.
Soak fish in fish brine overnight.
Submerge alder wood plank in plank brine water overnight, make sure something keeps it from
floating
Preheat an outdoor smoker to about 160 to 180
degrees F
Remove the salmon from the brine, rinse thoroughly and
pat dry with paper towels.
Remove the wood plank from brine.
Place fish on the plank.
Season with freshly ground black
pepper.
Smoke the salmon for about 2-6 hours, checking after 1
1/2 hours for doneness.
About 30 minutes before mix brown sugar, salt, and water
and brush onto salmon
(done when opaque and easily flaked with fork)
