Cedar Plank Salmon
INGREDIENTS
24x8x1 inch untreated cedar plank
6 -8 fillets salmon
1/2 cup olive oil
1 large red onion, chopped
1 lemon, sliced
1 teaspoon black pepper corns crushed
salt to taste
DIRECTIONS
Make sure the plank is untreated -that no chemicals
of any kind have been added to it
Soak untreated cedar plank in water overnight.
Preheat an outdoor grill for high heat.
Place the prepared plank on the grill, and then
sprinkle with coarse salt.
Cover grill let stand with plank 2 to 3 minutes,
until dry.
Reduce temperature to medium heat.
Rub salmon with olive oil.
Place salmon on plank.
Add onion, lemon slices, black peppercorns and salt
Cook covered, 10 to 12 minutes, or until done
(done when opaque and
easily flaked with fork)
