Salmon Chowder
INGREDIENTS
4 slices bacon
1/2 cup chopped onion
1 green onion in thin slices
3 1/2 cups chicken broth
5.5 ounce package scalloped potato mix
13-15 ounce can whole
kernel corn
1 pound salmon fillet
1 cup milk
1/2 cup evaporated milk
1/2 teaspoon dried dill
black pepper to taste
DIRECTIONS
Cut up bacon into small pieces fry and place on
paper towel
Grill chopped onion on bacon grease.
Remove onions and place in a pot then add chicken
stock, scalloped potato mix, undrained can of
corn, and ground pepper.
Bring to a boil and simmer about 15-20 minutes.
Cut salmon meat into small pieces and add to the
pot.
Once the potatoes are almost done add bacon, green
onion, and the dill.
Cook for 5 more minutes.
Add the milk and evaporated milk; stir and cook for
a minute or two.
