Shrimp Basil Kebabs
Another kabob for those with type 2 diabetes.
Shrimp contains
cholesterol so don’t eat too often since most diabetics have high
levels of cholesterol.
Shrimp Basil
INGREDIENTS
2
tablespoons olive oil
1/4 cup butter, melted
2 limes, juiced or 1 lemon
1 tablespoons brown mustard
1/2 cup minced fresh basil
3 cloves garlic, minced
salt and pepper to taste
3 pounds fresh shrimp, peeled and deveined
skewers
DIRECTIONS
Mix together olive oil, melted butter, lime,
mustard, basil, and garlic, and season with salt and pepper. Add shrimp, mix
well. Refrigerate for 15 minutes
to 2 hours. Lemon and lime
cooks shrimp and fish, don’t marinade
too long.
Soak skewers 30 minutes if they are wooden or bamboo
Lightly oil skewers if metal.
Set grill to high heat.
Thread shrimp to skewers.
Lightly oil grill grate,
Cook for 3 minutes or until done, turn occasionally
