Spicy Lime Shrimp
INGREDIENTS
48 shrimp peeled and deveined
4 limes, zested and juiced
4 green serrano hot
peppers, seeded and chopped
4 cloves garlic, crushed
3 tablespoons fresh ginger root, chopped
1 medium onion, coarsely chopped
1 tablespoon olive oil
Salt to taste

DIRECTIONS
Mix lime juice, chile
pepper, garlic, ginger, oil and onion in blender or food processor.
Pour mix shrimp with marinade.
Cover, and refrigerate for 30 minutes to 2
hours
Soak skewers for 30 minutes if wooden or bamboo.
Lightly oil skewers if metal.
Preheat grill for medium-high heat.
Thread shrimp onto skewers
Brush grill grate with oil.
Cook prawns for 4 minutes or until done turning
once.
