Southwest Salsa
INGREDIENTS
1 can black-eyed peas (15
ounce)
1can black beans, rinsed and drained (15 ounce)
1 can whole kernel corn,
drained (15 ounce)
1/2 cup chopped onion
1/2 cup chopped green bell pepper
1 can diced jalapeno peppers (4 ounce)
2 can diced tomatoes, drained (14.5 ounce)
1/2 teaspoon garlic salt or one clove roasted garlic
-optional
1/2 cup chopped cilantro -optional
home dressing (1 tablespoon
olive oil, lemon or lime, salt, pepper) -optional
DIRECTIONS
Take some fresh lemon or lime and mix with a tablespoon
of olive oil add salt and pepper in a small bowl. Add black-eyed peas, black beans,
corn, onion, green bell pepper, jalapeno peppers, cilantro and tomatoes
and add dressing mix well.
Cover, and refrigerate overnight to blend flavors.
